Today we kick things off on this interesting Meet The Manufacturer series with Vite Ramen’s Vegan option. If you didn’t know, there are three varieties from Vite Ramen – at least initially. Also, just so you know at the outset of this and the following reviews, these are prototypes. From what I’ve been told, this is what you’ll be getting, however the sachets in the final iteration will look different. So let’s give this first one a try!
Vite Ramen Vegan Mushroom Shio – United States
Here’s the information panel (click to enlarge). Note this was furnished by the company and not on the obverse side of the package shown above. Looks to be meat free but check for yourself. To prepare, add noodles to 2 1/2 cups boiling water and cook for 3 minutes. Add vegetables, seasonings and oil sachets and stir. Let soup cool to 160ºF (71ºC) then add the ‘Noodtrient packet’ for optimal nutrition. Finally, stir and enjoy!

Finished (click to enlarge). Added Salad Cosmo mung bean sprouts, tofu puff, kizami shoga, scallions, fried onion and nanami togarashi. The noodles are very soft, however they have this curious homemade kind of tooth to them I found pleasant. They have a kind of hearty flavor as well – but not gritty in the least. The broth isn’t extremely salty, and had a kind of chicken mushroom stew feel to it. Bits of cabbage and other vegetables were here and there and of good quality. 5.0 out of 5.0 stars. No bar code.
