Sadly, Fukushima is best known nowadays for the recent tsunami, but in Japan the little area is very well known for their delicious ramen that is still thriving. Surrounded by rice fields and mountains, the only way to reach Kitakata is by local train.
This Kitakata ramen is a mild shoyu (soy sauce) based soup broth delicately balanced to not be too overpowering in flavor and only slightly oily. The noodles are decently tick, soft, and smooth. Unique to Kitakata ramen is the slight waviness of the noodles. The softness of the noodles are caused by a higher content of water than is typical since these noodles are ‘tsukemen.’ This causes the noodles to be slippery and some say they slide down your throat and hardly need to be chewed!’

Boil on high heat for 30 seconds, then medium heat for 4 monutes. MEanwhile, add sachet contents to 300ml hot water and combine. Loosen noodles and drain. Add to a bowl, and add soup base. Finally, enjoy!
