This mazesoba features unique and local flavors from Niigata prefecture, Japan’s snow country. The noodles are finished with a spicy soy sauce containing kanzuri, a paste made with yuzu kosho (citrus + pepper), chili pepper, salt, rice koji (a yeast), and yuzu peels.”
