I was contacted in July 2020 about a new variety of noodle hailing from Taiwan. I was very interested in trying and gave the company the go ahead. Fast forward to mid September and I’m going to give it a try – they arrived last week. These sound interesting; they’re Vegan friendly and have a minced pork sachet which is made with so protein, mushrooms, white fungus, celery and other vegetables. A chewy noodle and a ‘secret sauce’ with Sichuan pepper is mentioned in the promotional sheet that accompanied these. Let’s give it a try!
Hi-Lai Foods Lai Noodle – Taiwan
Detail of the side panels (click to enlarge). Says it’s Vegan – check for yourself. To prepare, add sauce to a bowl. Boil noodles for 7 minutes and 35 seconds. Drain. Finally, add to bowl, stir, and enjoy!
The noodle block.
A wet sachet of Vegan minced pork.
Soy sauce perhaps?
Maybe a spicy oil.
Finished (click to enlarge). Added chashu, marinated egg, spring onion, pepper flake, sesame seed. The noodle comes out just perfectly with a very hearty chew and quality. The flavor is wonderful – notes of Sichuan peppercorn intermingle with soy and this charming Vegan mince that has a sweetness that lingers around the palate and then ducks in and out. Everything I love about Taiwanese dry noodle with a unique addition. 5.0 out of 5.0 stars. EAN bar code 4711033901016.
