I’ve long been a fan of the Soon line of products from Nongshim. If asked whether I’d want Shin Ramyun or Soon, I’d hit the Soon. Why? It just has a really nice smooth finish (it sounds like I’m describing a beer but really it does). This time they’ve got a trifecta of new versions – kimchi, a spicy tomato and a miso tofu. Today kimchi is on the menu – let’s check it out.
Nongshim Soon Kimchi Noodle Soup – United States
Detail of the side panels (click to enlarge). Says it is Vegan but look for yourself. To prepare, add in sachet contents and fill to line with boiling water. Cover for 3 minutes. Finally, stir and enjoy!

A dry soup base sachet.
Loose vegetables from the cup.
Finished (click to enlarge). Added marinated egg, narutomaki, chashu, spring onion, pepper flake, and sesame seed. Noodles came out well – I steeped with boiling water instead of microwaving. Generally, microwaving works well too. The noodles have a nice chewiness to them. The broth is slightly spicy and very tangy, kind of the hallmarks of kimchi. The amount of vegetables here is very good – always like to see more vegetables. 4.0 out of 5.0 stars. UPC bar code 031146033492.
