Here’s a unique and tradition variety from Taiwan. I’ve had fish head curry in Penang, Malaysia before, but this sounds like it’s quite different. Very curious about this one – let’s give it a try!
Little Couples Dry Noodle Fish Head Casserole – Taiwan
Detail of the packaging (click to enlarge). Contains flounder and clam. To prepare, boil noodles for 6 minutes and drain. Add in sachet contents. Finally, stir and enjoy!

Finished (click to enlarge). Added green onion, marinated egg, fish ball, sesame seed, and mala sauce. The noodles are out of this world – exactly what I’m looking for when I think of Taiwanese dry noodles; the little scalloped edge puts me in a tizzy. The flavor was good – not strong or overbearing.
