Found this one at the Asian Family Market on 130th & Aurora in Seattle. They’ve got a lot of premium varieties – this one is in a little box which is pretty neat. I’ve had some from this brand in the past I really didn’t like but I’m hopeful – I mean, they’re mentioning night market in the title and night markets are really, really cool – at least when I visited Taiwan. Let’s check it out!
Yumei Night Market Chow Mein – Soy Sauce Flavor – China

Detail of the inside of the package (click to enlarge). Looks to be meat free but check for yourself. To prepare, boil noodles for 2~3 minutes and drain. Add 2 tsbp oil to a frying pan and add in bean sprouts. Stir fry bean sprouts for 30 seconds. Add in noodles and stir fry 1~2 minutes. Add in everything else. Finally, stir and enjoy!

Finished (click to enlarge). Added spring onion, sesame seed, and beef. Noodles are thin and light which was nice. Included bean sprouts were good, however what seemed to be carrot was a little on the meh side. Flavor was very light; I ended up going a little deeper with more sampling and it ended up alright, but definitely something you’ll need to add a lot to to make it sing. 3.5 out of 5.0 stars.
