Chinese soba. Soba is buckwheat in Japanese, and is also the name of a traditional dish dating back to the Edo period that consists of both soba noodles and fish broth with soy sauce. For this recipe, Oguro Shokuhin used delicious and flavorful dried sardines, paired with a sharp and clean soy sauce-based liquid soup. They come with thin noodles that have a firm texture and go well with the broth. Last but not least, the Kayaku (かやく, 加薬), or toppings are fu (wheat gluten), chashu (pork), green onion, and egg, which soak up the flavor of the broth. it’s a real delight.’
I’m generally not a fan of buckwheat soba, but I’ll give it a whirl. Let’s check out this one.
Oguro Shokuhin AKAGI Niboshi Chuka Soba – Japan
Detail of the side panels (click to enlarge). Contains chicken and pork. To prepare, Add everything but liquid base to bowl along with 450ml boiling water. Cover for 3 minutes. Add in liquid base sachet. Finally, stir and enjoy!

Finished (click to enlarge). Added egg, chashu, sesame seed, shichimi, and spring onion. Noodle wasn’t a buckwheat soba, that’s for sure. Pretty good, actually. The broth was very different – a lot of things going on. Sweet notes, and more. The amount of fu – the little bready things – was insane – and I liked that.
