Here’s what he has to say about this one – ‘This is from Nakiryu, one of just three Tokyo Michelin star ramen shops! Nakiryu specializes in tantanmen (dan dan noodles), a spicy style of ramen originally from Sichuan province in China. As you’d expect from a place with a Michelin star, Nakiryu’s version is as elevated as tantanmen can get. But this tantanmen doesn’t exist at their restaurant – it’s soupless! It features a buttery rich flavor and just enough spiciness in the background. Thick, flat noodles take in these beautiful flavors. This latest version includes a little bit of acidity, coming from tomatoes.’
Michelin star eh? That’s fancy stuff – sounds good let’s give it a try!

The noodle block.
A large sachet of sauce.
A slightly smaller sauce sachet.
Guessing bits of pork.
Finished (click to enlarge). Added egg, sesame seed shichimi, spring onion, and mung bean sprout. The noodle was spectacular; great chew and gauge – really nice stuff. The flavor was really good – like an oily and tangy and sweet and the inclusion of the meaty little bits was phenomenal. Another great pick from Frank. 5.0 out of 5.0 stars. 4902105272305.
