This is a variety you can find at Ippudo’s ramen restaurants. Here’s a little info from their menu about this particular variety – ‘A more bold translation of the original pork broth, thin noodles topped with Ippudo’s secret “Umami Dama” miso paste, pork belly chashu, cabbage, and sesame kikurage mushrooms.’ Sounds quite good – let’s see how it goes.

Finished (click to enlarge). Added sesame seed, spring onion, egg, chashu, mung bean sprout, and shichimi. Noodle has a great gauge and chew – light and effective as a pairing with the broth. The broth is a full andsavory porkstravaganze. The spicy condiment was sweet with a spicy bump to it; not to my liking but that wasn’t enough to knock it off it’s high perch. 5.0 out of 5.0 stars.
