Tokushima Seihun (徳島製粉) is a very local ramen producer in Shikoku, and it’s rare for their ramen to be available elsewhere in Japan. 🗾 Inspired by a traditional Chinese dish, Tenshinhan (天津飯), which is usually prepared with rice, but in this case, with noodles: hence the name Tenshinmen (天津麺). Kinchan Noodle (金ちゃんヌードル) are smooth and chewy round noodles paired with a sweet soy sauce based soup made with chicken, shiitake mushrooms, and oysters. It also contains seasoned egg, fish paste, and green peas! 🍥’

Tokushima Seifun Kin Chan Noodle Tenshinmen Fu – Japan
