These are noodles made almost entirely from egg white. I’ll show you what I did with them in this unboxing. You can purchase them here. The ramen style thicker, vermicelli thinner. I thought upon stirring, the vermicelli would just turn to mush and break up, but that certainly wasn’t the case. Not at all rubbery, with a good mouthfeel and softness.
