I don’t normally review noodles – I review noodles and seasoning. But when I caught wind of this, I thought maybe I should reach out to the company. Sure enough, they sent samples – so I’m going to give ’em a try. What’s fascinating is that these are egg white noodles. That’s pretty much it – egg whites and water. Let’s see what happens.

Finished (click to enlarge). Added soup base from Myojo Ma-Yu oil tonkotsu, scallion, egg, and sesame seed. The noodles are very light – I mean, they’re egg whites. That being said, it certainly seems like they are stronger than one would expect. They don’t break up when stirred vigorously which was nice. It’s different, but a good kind of different.
