Here’s a variety that I found in one of MiauMall’s Nakama Noodles subscription boxes! These boxes are discontinued, however you can find their stuff at MiauMall – here is what they said about this one – “Next up, let’s indulge in the deep umami of miso. Combined with Chicken and pork stock for a flavor explosion, this cup of noodles balances its richness with sweet sake lees and bits of corn culminating to a hearty, yet refined ramen. I am flummoxed – sake lees? I asked Wikipedia about it –
Sake kasu (酒粕) or sake lees are the pressed lees left from the production of sake (Japanese rice wine). It is a white paste used in cooking.[1] Its taste is fruity and similar to sake.[2] A by-product of Japanese sake production, it typically contains 8% alcohol, has high nutritional value, and might have health benefits.
Okay that’s interesting. Let us continue.

Finished (click to enlarge). Added sesame seed, egg, narutomaki, scallion, and S&B Crunchy Garlic. The noodle was pretty good – round in shape. The broth was very interesting; I figured the sake lees notes would be in the background but just the opposite – and it was fascinating. Not boozy, but the flavor worked well.
