Yuan Xian Hot and Sour Vermicelli – China
Detail of the packaging (click to enlarge). Looks to be meat free but check for yourself. To preparer, boil noodle for 2 minutes and drain, saving as much liquid as you’d like for the soup. Add in all sachets. Finally, stir and enjoy!
A pouch of shelf-stable fresh sweet potato noodle.

Finished (click to enlarge). Added egg, scallion, Su Mala Chili Crisp, and sesame seed. Noodle is floppy and sloppy which I liked. The noodle, in concert with the thick and oily broth is very good – a strong sour and spicy push-pull works well. Included veg and tofu skin is really nice. 5.0 out of 5.0 stars.
