Over the years, I’ve figured out ways to take nice pictures of instant noodles. However, it wasn’t always that way. I’m no pro photographer, but I’ve taken a ton of pictures. Broth and soup is a really big pain in the butt to shoot. Here are tips and tricks I’ve learned through trial and error that really help.
Recently, I was contacted by someone who wishes to remain anonymous about something I mentioned in passing that I’d always wanted. They asked if they could buy one for me and I accepted – thank you so much! But wait – what is it? Watch and find out!
It’s been a while – since 2016 – that I’ve put out a list of my favorite instant noodle varieties from Thailand. It seems like forever ago that I was able to look out of a window and see the Chaophraya river winding it’s way through Bangkok, party boats blasting music all hours of the day and night. I truly hope life affords me the privilege of visiting Thailand again someday – it’s really a place to behold. A nice little portable and tasty piece of Thailand can be found in the varied instant noodle varieties that travel to us around the world. Do you like eggs? If you don’t, there’s probably a reason. But you can leave the room now, because this isn’t for you. No, I’m not being rude, but if you have no interest in eggs, then why are you here? I mean, just to say you don’t like eggs? That’s an inefficient waste of your time, so do something else.
What is this? Where does it come from? These are all good questions about these Panda Signature products sent by a guy named Daniel from Montana (thanks again!). After looking all over the packaging and just finding they’re distributed here in the United States by Albany Farms, I noticed something. The HALAL stamp. It’s under the authority that gives out HALAL certifications in… Malaysia!
Well, after a week with the Top Ten stuck to the top of my page, it’s time for the complete opposite list. These are my least favorite. Just know that if there’s one on here that you really enjoy – you’re not a bad person! After one very turbulent year, The Ramen Rater’s Top Ten Instant Noodles Of All Time is back. My mother died, we had an auto accident, the kids missed in-person schooling, and of course the pandemic. It’s been a really rough go but we’re back. Vaccines are rolling out everywhere and hopefully we can all get back together someday son. One thing I’ve found inspiration and enjoyment from during these times is a book I’d been hoping to find was sent to me by a noodle company exec called Momofuku Ando Speaks. It’s a book of quotes (kind of like the Ferengi Rules Of Acquisition if you’re a Star Trek fan) by the inventor of the instant noodle. I’ve been reading one on my show Instant Noodle Recipe Time every day – a lot of fun and a very interesting perspective. Little things like that have been really important as of late. Today, I’m proud to announce the show hits its 1000th episode!
I’ve done a bowls and cups list over the last few years annually, but I’ve never done a trays list. Most trays end up being yakisoba – so you could consider this a yakisoba list as well. To start, I want to take a moment to recognize the passing of Nunuk Nuraini. Many of you haven’t heard of her and so I wanted to tell you a little about her. She was the spice mixer for Indomie and died earlier this year. The flavors she shared with the world are legendary I thought it fitting to honor her with a mention before we start this list. Okay so I’ve had people tell me I had to try this for a long time and so since my lovely wife Kit has been really into pickles lately (no, she’s not pregnant), I figured why not give it a try. Here’s a video showing what I tried.
I’ve been enjoying spicy instant noodles for years now and these are some pretty lethally spicy ones. We had a great Thanksgiving yesterday – Kit made a wonderful turkey, chocolate chip banana bread too! My buddy Matthew Bellah (the highly acclaimed author) brough over homemade cornbread and traditional stuffing, mashed potaoes, and a loaf of fancy bread.
I’ve got to give it to Taiwan. They’ve really done well with the pandemic, that’s for sure. Just another reason why I love that place; I’ve visited twice and hope I get to again soon. People there are nice, Lots of interesting things going on, and of course… the food! This list is born out of controversy – in 2013 when Taiwan wasn’t on my annual top ten, their media took notice and they got mad. So, I decided to try some ‘noodle diplomacy’ and asked companies to send some samples and they did – and they have been for years now. All sorts of neat innovations, unique styles, and more. A lot of things have changed in the last year. I decided it would be a great time to come out with the Top Ten American instant noodles list; it’s November 2nd. Tomorrow is the last day to vote in a crucial election – whichever candidate you support, go exercise your right to vote! The video this year is very different. This yeah has just been rough – for everyone I know. After the hardest part of it for me – the passing of my mother – I took a week off from walking after doing 1,000,000 steps on my Fitbit in June and dove in to working on top ten lists. I did four of them, all current as of review 3545. This list hasn’t been updated since 2017. Bowls, cups, , trays, packs, and boxes. Well, I haven’t done a list of boxed or tray-style instant noodles – maybe that will come soon. But I think that separating these is important. The experience that a cup is meant for is different than a cup or bowl. Cups are more for a snack on the go, packs for when you’ve got a stove, and bowls are, well, for lunch. Although in the finished shots of these you’ll see them plated here, generally people will be looking at the bowl they came in, possibly using the plastic fork they came with, and tossing everything once they’re done. So as many of you know, I’ve lost a ton of weight in the last two years. I started in October 2018 and now am down 160 pounds. One thing that has kept me motivated was changing things up to keep it interesting. At the end of last month, I’d done the most steps I’d ever logged on my Fitbit – close to 900,000. I thought hey – maybe I can get to 900,000 in June 2020. Then I thought hey – whynot a million?
I’ve been doing these Prison Style Burritos for a while – usually with varieties not found by inmates in prisons. I went to India Supermarket over in Bellevue, Washington yesterday and got these ingredients and made this monstrosity. Enjoy!

Despite all the tumultuous and unnerving events of our current age,, I am happy to announce that I’ve got a new list for our year, 2020. In the past fe hundred reviews I’ve done this past year there have been some real standouts and of course many have remained. These are my absolute favorites of reviews 1 through 3487. It’s hard – I feel like I should be doing a top 20, or even a top 50 at this point, but the sheer amount of time that would take with being a stay at home father of two while trying to get in a few hours of exercise every day just isn’t in the cards. I’m hoping in the coming months to come out with the regular top tens and maybe some new ones, but it’s a tough juggle these days.
I hope you’re ready to sit and watch the creative juices flow. I’ve been kind of sitting here ruminating over a sandwich for a while. As I don’t ever really eat sandwiches these days, I wanted to make something really good. This fits that bill. This will make you happy to be in quarantine. Because you can spend time with this sandwich. It’s something that I will make again, that’s for sure. Now, bear witness to the finest ramen grilled cheese sandwich in the entirety of the universe.
The world has gone bonkers. We’ve got that pesky Coronavirus gnashing it’s teeth, and numerous other oddities making daily life less enjoyable that usual.
I thought I’d do a quick update as to everything I’ve been doing to attempt to lose weight. Winter has come. Harder to have the ability to get outside – who wants to walk in the pouring rain? Plus, lots of vacation time for kids so stuck at home a lot. Here’s a new video about what I’m doing. plus I did a recipe using a couple ingredients including Hakubaku Udon noodles – it’s pretty quick – not going to say it’s only 5 calories, but it’s super good.
People have been asking me for a list of healthy varieties for a long time. I decided to give it a try, and had mixed results. I’ve found things ramen/instant noodles, and things that aren’t and listed them here. There aren’t ten things, but over the next year I’m guessing more will present themselves. It appears this is an ever-evolving market as a couple that were going to be included went off the market while I was editing this list! Not everything presented is for everyone, but I’m really hoping there’s something that will work and interest everyone. I thought in honor of the spooky holiday Halloween, I’d do a little roundup of images and videos from past and present involving things that seemed fitting. Eat, drink and be scary!
Usually, this is a summer list, coming out late July or early August. No more. Why? A couple of reasons – first, I’ve been busy. The whole diet and exercise thing has kind of taken over my life – which is good and a pain at the same time. I do a LOT of walking – often 15 miles in a day. This takes a lot of time and so there’s that. The other reason is that I’ve heard many ask why this list doesn’t come later in the year when it’s colder.
I thought to continue this series of Prison Ramen Burrito Recipes that you couldn’t get in prison since you can’t get these varieties, the next logical step would involve Shin Ramen/Ramyun. I ended up with the standard Shin Ramen as well as Shin Black in this one. It ended up being an enormous monstrosity!
