On a recent trip to the Uwajimaya in Bellevue, WA I spotted this one. This is made in the United States and sounds really good. Tonkotsu is characterized by a milky white broth – usually pork, but this one is chicken! It sounds really good and seeing this is my wife’s Friday, I thought I’d surprise her by making her a bowl.
