I’ve tried quite a few different varieties from Taiwan and other points around the world. What’s interesting about this one is that it’s a Southeast Asian variety (Malaysia, Singapore) coming from Taiwan. Sounds interesting, especially t me as a fan of curries and fish ball. If there’s one thing that’s a certainty, companies from Taiwan tend to send me product samples more often than from any other country. They’re constantly innovating and refining, coming out with neat new things. Taiwan is a great place I’ve had the luck to visit twice. On one visit, I went to a large store and they had two aisles of just instant noodles that I really wish I would have taken pictures of. Now, what you’ll see on this list is mainly Taiwanese dry noodle. An ‘instant’ noodle is one that you can simply cover in boiling water for a short time and they spring to life. These require cooking. I hope to hear from Taiwanese instant noodle companies in the coming year; this is an invitation to you! It would be really nice to release a list of instant noodles alongside a list of dry noodles. This list is comprised of reviews of Taiwanese noodles up to #4650. This is really quite interesting – I’ve never tried a noodle with boba! Boba is what you’d find in bubble tea. It’s big tapioca. Also, I’ve never heard of that particular ingredient paired with wasabi. This is going to be a trip – let’s try it!

#4294: Mom’s Dry Noodle Spicy Goose Oil With Shallot – Taiwan
It’s probably a surprise to you, but I haven’t done a regular review in about a month. Why? Well, for almost two months I was doing 3 reviews a day, almost every day. So, I got way ahead of myself and decided to take a break. I also ran out of noodles and thought maybe I’d let my noodle supply grow a little bit, which it has. This is a variety that came in the last month. I did an interview for a fancy food publication called Magazine F from South Korea – they did a ramen themed issue. They hired a local photographer to do a photo shoot and I made some of this for it. It’s Friday right now – June 23rd. I’m guessing it’ll be late autumn when it comes out. Let’s check it out!

A number of years ago, I thought I’d see what would happen if I cooked up some noodles and ran a camera as I did it. It’s kind of funny – a lot of the large projects in my life have started with ‘let’s see what happens.’ I had thought for years the idea of shooting video while I cooked noodles for reviews was a purely idiotic idea; I would have to edit every video, which would take so much more time than the way I did things. Well, I found a way around that.

#3959: Mom’s Dry Noodle Red-Braised Beef Noodle Soup – Taiwan
The last boxed variety I tried from Mom’s Dry Noodle was an absolute knockout. It was by far the finest chicken instant I’ve had bar none in all the years of my reviewing. Now, we’ve got a beed variety and I’ve very curious as to how this is going to be. You’re not going to find this one in the states – maybe eBay or eBay.ca might work. This one contains beef and I’m guessing a good amount of it! Alright – let’s get down to giving this a try.
Mom’s Dry Noodle Dan Dan Noodle Bread Experiment
Well a good day to you! Two days ago, I attempted a bread made solely from ground instant noodles that came out horribly. This on the other hand came out very well. I can’t really give you a recipe to speak of since so much of it was improvised in the moment, but here’s a rough idea of what I did.

Mom’s Dry Noodle Sends Mind Blowing Spicy Crackers!
I regularly receive samples of new noodles from the folks over at Mom’s Dry Noodle in Taiwan. I got to try these a while back as part of a shipment of noodles. I thought I’d give them a try and I was just floored. These things are good! The cracker is light almost like pastry, with baked on cheese, a little tasty onion flavor, and a bit of Sichuan pepper which is a gentle nudge – unless you eat a few and then builds to a little shove! These things are awesome – check ’em out and get some!

After one very turbulent year, The Ramen Rater’s Top Ten Instant Noodles Of All Time is back. My mother died, we had an auto accident, the kids missed in-person schooling, and of course the pandemic. It’s been a really rough go but we’re back. Vaccines are rolling out everywhere and hopefully we can all get back together someday son. One thing I’ve found inspiration and enjoyment from during these times is a book I’d been hoping to find was sent to me by a noodle company exec called Momofuku Ando Speaks. It’s a book of quotes (kind of like the Ferengi Rules Of Acquisition if you’re a Star Trek fan) by the inventor of the instant noodle. I’ve been reading one on my show Instant Noodle Recipe Time every day – a lot of fun and a very interesting perspective. Little things like that have been really important as of late. Today, I’m proud to announce the show hits its 1000th episode!

I’ve got to give it to Taiwan. They’ve really done well with the pandemic, that’s for sure. Just another reason why I love that place; I’ve visited twice and hope I get to again soon. People there are nice, Lots of interesting things going on, and of course… the food! This list is born out of controversy – in 2013 when Taiwan wasn’t on my annual top ten, their media took notice and they got mad. So, I decided to try some ‘noodle diplomacy’ and asked companies to send some samples and they did – and they have been for years now. All sorts of neat innovations, unique styles, and more. Here’s another fancy one from Mom’s Dry Noodle! Now, many of you probably haven’t tried anything with blood in it. Let me reassure you that I have and there are some really great foods that do contain it from many places. Malaysian White Curry often contains coagulated duck blood, while in Taiwan I’ve tried pork blood rice cake which was absolutely wonderful stuff. I know it’s popular in a Vietnamese soup as well.

Despite all the tumultuous and unnerving events of our current age,, I am happy to announce that I’ve got a new list for our year, 2020. In the past fe hundred reviews I’ve done this past year there have been some real standouts and of course many have remained. These are my absolute favorites of reviews 1 through 3487. It’s hard – I feel like I should be doing a top 20, or even a top 50 at this point, but the sheer amount of time that would take with being a stay at home father of two while trying to get in a few hours of exercise every day just isn’t in the cards. I’m hoping in the coming months to come out with the regular top tens and maybe some new ones, but it’s a tough juggle these days.

This is the seventh year of the Top Ten Taiwan Instant Noodles list! Every year, I’m truly amazed at the innovation and unique varieties coming from the beautiful island of Taiwan. If you haven’t had the experience of visiting, you really should – the food, the culture – it truly has been a life changing experience for me. Growing up, all I knew of Taiwan was labels on products that simply said ‘made in Taiwan’ – but it so much more. One aspect is the noodle, and they’re really unique and delicious. This is a list of my favorite out of the reviews I’ve done up to number 3,284. Many images you will see have garnish, however only the base product before any is added is what’s reviewed, as in all of my reviews. One of my favorite styles of curry would have to be green curry. It’s very different from the others – a kind of crisp and savory flavor rolled into one. This is really exciting to try – curry from Taiwan in collaboration with a company from Thailand. Very curious. Been waiting a couple weeks to hit this up, so let’s go!
