MAMA Tom Yun Cup – Thailand
A little background
Back in 2015m I was invited to visit the MAMA company in Thailand and it was really an honor. I got to tour the factory. The smell when you get into the complex there is of palm oil – they’re boiling noodles in oil 24/7, so it’s really quite an amazing scent. Why do they do this? Instant noodles are ‘instant’ because of a process discovered by Momofuku Ando back in 1958. He wanted to make a shelf stable noodle product for the masses. He tried to figure out how to do this, but it all came together when he was watching his wife make tempura. The science is you take a cooked noodle – boiled in water. When you immerse it in boiling oil, it extrudes the water, leaving tiny holes. Once water is reintroduced, it invades those tiny holes and after about three minutes they spring back to life.
A little about Tom Yum
Tom yum is a Thai soup. It combines the flavors of lemongrass, seafood (generally) and chilies. Really a wonderful thing. There are many variations of the dish all over Asia; Malaysians do a version which has a thick broth in comparison, while the Thai version is much thinner. This cup is a variety that many whom I’ve spoken to grew up enjoying in Thailand, so it brings them memories of home.
